Grown on the bluffs of the San Joaquin River on the Saviez Ranch, it was hand-picked at the peak of ripeness to make a wine that is full bodied, soft and balanced. Ruby Cabernet is a cross between Cabernet Sauvignon and Carignan done in the 50’s at UC Davis. It was selected because of its abiltity to produce wines with qualities similar to coastal Cabernet Sauvignons but in the warmer climate of the San Joaquin Valley. This Ruby Cabernet is from a vineyard in western Fresno County and was harvested at full ripeness to produce a BIG wine. It’s soft tannins and high ABV are balanced by its 5% residual sugar and mild fruit character to produce a very intense and delicious wine.
This Cabernet just won Best-in-Class at the San Francisco Wine Chronicle wine competition. It is a great example of the quality wines that can be produced in our warm growing region. The grapes are from an old vineyard east of Tranquillity and are picked at the peak of ripeness, then handcrafted in a small batch into the finished wine. The ripe fruit and tannins are very well balanced and the gentle acidity and 15% ABV contribute to its full body and roundness. We know you will enjoy this Cab with any meal, special occasion, or “just because”.
